Fresh beet salad

Components:

  • 1 medium-size beets
  • 1 big carrot
  • 2 cups of spinach cut into strips 4 cm long
  • half a cup of cleaned, crushed walnuts
  • 2 tablespoons of olive oil
  • 3 tablespoons apple vinegar
  • 2 tablespoons of lemon juice
  • 10 mint leaves
  • 2 tablespoons of mustard
  • pepper and salt, to taste

Preparation:

Peel the beetroot and brew, and then cut the carrot into thin discs. Mix, add spinach and walnuts, salt and mix well. Make a dressing from oil, vinegar, lemon juice, chopped leaves of mint, mustard, and pepper, and pour over the salad.
